Tejas Vegetable Medley Orzo

INGREDIENTS:

  • 7 cups water
  • 1.5 tsp sea salt
  • 1 tbsp garlic salt
  • 1.5 cup chopped carrots
  • 1 cup chopped kohlrabi or turnip root
  • 1 cup chopped fennel
  • 1 cup chopped onion
  • 12oz Mild Tony's Tejas Salsa or 10oz of crushed tomatoes, 2 tbsp fresh garlic, 1/3 cup minced bell pepper
  • 1.5 cup chopped broccalini
  • 2 bay leaves
  • 1 tbsp basil
  • 32oz vegetable broth
  • 1.5 tsp oregano
  • 15oz can black beans drained
  • 1 tsp sage
  • 1 cup chopped mushrooms
  • 3 tbsp balsamic vinegar
  • 1.5 cup chopped egg plant
  • 1.5 cups of Orzo

Warm Spinach Cranberry Salad with Citrus Salsa Dressing

Dressing 

  • 1/3 cup olive oil
  • 2 tbsp orange juice
  • 2 tbsp salsa
  • 1/2 tsp oregano
  • 1/4 tsp garlic salt

Salad

  • 5 cups of baby spinach
  • 1/4 cup of cranberry
  • 1 sumo mandarin

Tejas Shrimp Creole

Ingredients:

  • 1lb peeled & deveined shrimp
  • 12oz of Tony's Tejas Salsa
  • 1oz flour
  • 2oz worcestershire
  • 3oz olive oil
  • 2oz lemon juice
  • 1/4 cup minced celery
  • 1/2 tsp paprika
  • 1oz water
  • 1 tbsp scallions
Directions:
  1. Heat a pan on medium.
  2. Add your flour and let brown. 
  3. Mix the oil & paprika in until they turn into roux. 
  4. Add your salsa, celery, and onions then let reduce for 3-5 min. 
  5. Add lemon juice & Worcestershire, stir and turn down heat to low. Let simmer for 2 min. 
  6. Add shrimp & stir until shrimp turn red (about 2-3 Minutes). 
  7. Serve over rice.

Tejas Succotash

Ingredients:

  • 4oz Tony's Tejas Salsa
  • 2 green onions, chopped
  • 1 cup of steamed corn
  • 1/2 cup of boiled lima beans
  • 1/2 cup of boiled red beans
  • 2 tbsp of butter or oil
  • 1/2 tsp sea salt or seasoning salt

Directions:

  1. Heat pan to medium high heat. 
  2. Add butter & onions until al dente.
  3. Drain corn & beans then add them to the pan with the salsa & stir for 2 min.
  4. Sprinkle the seasoning across veggies & reduce the heat to low & let simmer until beans are tender 5-10 min.
  5. Garnish with scallions.

Tejas East Indian Green Beans

Ingredients:
  • 1 lb of fresh green beans
  • 12 oz of water
  • 1 tbsp of diced onions
  • 4oz of Tony's Tejas Salsa
  • 1oz of coconut or olive oil
  • 1/4 tsp of Curry powder
  • 1/2 tsp of Coriander
  • 1/4 tsp ginger
  • 1/4 tsp smoked sea salt

Directions:

  1. Combine water, onions, and beans in a pan on med-high heat.
  2. Cook down for about 10-15min.
  3. Add oil, Curry, Coriander, ginger, and salsa.
  4. Saute until tender and salsa reduces.

Tejas Veggies

Ingredients:

  • Squash and Zucchini
  • Tony's Tejas Salsa
  • Onions
  • Red Bell Pepper
  • Olive Oil

Directions:

  1. Heat pan.
  2. Add 4 tbsp olive oil and the veggies.
  3. Add 5 oz of Tony’s Tejas Salsa.

Tejas Ribs

Ingredients:

  • Tony's Tejas Salsa
  • Season salt
  • Honey

Directions:

  1. Season and pour Tony's Tejas Salsa on both sides.
  2. Wrap ribs in plastic wrap. 
  3. Allow ribs to marinate for six hours.
  4. Cook used desired method.

Tejas Burgers

Ingredients:
  • 3 pounds of ground meat
  • 1 pint of #theworldsbestsalsa

Directions:

  1. Put ground meat in a bowl and mix in half a pint of salsa.
  2. Cook burger in a skillet and top with a spoon full of salsa.
  3. Flip and add another spoon of salsa.

Tejas Wings

Ingredients:

  • 1 bag of party wings
  • 1 pint of Tony's Tejas Salsa
  • 1/4 cup of olive oil
  • 4 oz of beer

Directions:

  1. Put oil, chicken, salsa, and beer in a pot on a med-high flame.
  2. Stir and reduce down, then turn flame down to a simmer with a lid.

Tejas Turkey Queso

Ingredients:

  • 1/2 diced onion
  • 1/4 diced red bell pepper
  • 1/4 diced yellow bell pepper
  • 1 diced Poblano pepper
  • 1/4 cup Shoreline olive oil
  • 1 tube of turkey sausage
  • 1 block of White Velveeta cubed
  • 1 pint of Tony's Tejas Salsa (the most important ingredient)

Directions:

  1. Heat pot to Med-High. 
  2. Put olive oil, onions, and peppers in pot. Lightly season with garlic salt. 
  3. Add 1/2 pint of Tony's Tejas Salsa and stir until veggies are half cooked. 
  4.  Add turkey sausage and break up as much as possible. Make sure you cook the turkey sausage up to 165 degrees. 
  5. Add 8 to 10 cubes of cheese and stir until they melt, then add more cheese.  
  6. Once all the cheese melts, add another half pint of Tony's Tejas Salsa and stir it up little darling.  
  7. Put the mix into a blender and blend until there are no chunks left. Serve with chips, toasted bread, or crackers.
